Why not pick one of the top ODI all rounders in the opening spot?

He actually is. Probably the second best opening all rounder in history behind Gilchrist.
Longetivity doesn't necessarily mean his one of the alltime greats. His not even an allrounder, his a part-timer. Took less wickets then innings bowled in.

He has played 444 matches
Bowled in 367 matches (for whatever reason not having bowled in the others)
and averages 7 overs a game in those matches. 7 is a large proportion in ODIs.

He began solely as a bowler and his batting figures suffer heavily from this period.

It's not just his longevity, but the fact that he has the stats to back it up.

He was very potent in a number of World Cups as well. Jayasuria cannot be ignored as one of the greatest opening batsmen in one day cricket history.

Sanath debuted in 89 and didn't actually open the batting until 1993 for a short while. He then started to open regularly in 94. Nor did he become a very good batsman until 96, before then he was just a handy pinch hitter.

Since 1993 only 5 players have 5000+ runs and a strike rate of 90+

Sanath, Gilchrist, Sehwag, Afridi, Symonds

Afridi of course averages in the low 20s, Symonds only just has over 5000 runs and while great player, himself and Sehwag both arguably benefitted from the higher, scoring 2000s.

Sanath was just an immense player, decimated the opposing team and if he didn't play in such a strong spin bowling team would have probably been one of the teams frontline spinners.
Has some of the greatest ODI innings of alltime to his name does Sanath.

ODI cricket is best measured by a combination of average, strike rate, longevity and observation. Jayasuriya has played a huge amount of cricket and has been one of the best performing players over a long period. He basically pioneered the aggressive-first-15 over strategy that basically everyone copied.

Would love seeing Sachin and Hayden open. Believe Hayden can do the job at the top better than Gilly.

Terrible POV IMO especially if you consider the length of his career there would easily be periods where he averaged close to 40 with a SR of 90 over 200 odd matches.

Gone for Jaya and Sachin.Dhoni has done enough to claim the w/k spot for mine - 150 games, 5000+ runs with 50+ average and 90 SR.Gilchrist is not the best pure batsman in that list and Jaya gives an additional option with the ball.
