He's not the greatest wrestler per se, but for character I'm going to go with Chris Jericho.

I personally don't care how good a 'wrestler' they are (we all know why), so the personality was always more important to me. Don't watch it any more now though.

My favourite wrestler since the age of 4, when I first started watching wrestling. I remember going to one of the fights where he took on Yokozuna in for the World Heavy Weight Title, and he owned him hard, best days !
