Mark Taylor took four catches in an ODI v the Windies in 92-93 where Australia got rolled for 100 and won. Two were species and IIRC he got MOTM for his catching, which is probably the only time I've heard of that happening.

Pretty sure wicket keepers have on occasion got motm for taking big bags of catches and possibly stumpings without big scores off their bat before, especially in tests.

But it is rarer for a non-keeper I agree.

Pushing the boat out even further, apparently Jonty Rhodes may have got motm for his catching in a schoolboy game when not even in the playing XI. But this could just be an old wise tail.
