I’m interested exclusively in their wicketkeeping abilities, not their batting at all. Across formats.

Personally, I reckon Dhoni was better standing up, while Gilchrist was better farther away, and it’s up to which difference you think is greater or what you feel is more valuable for a keeper.

Was Dhoni even better standing up or he just looked more...... Unique. Gilchrist kept to Warne and MacGill, two of the biggest turners of ball, pretty effectively.

In terms of just pure ball collection and preventing byes, which is like 90% of the keepers task, he wasn't better at Gilly even while standing up. Though in ODIs the ball doesn't turn much, this ain't as much of an issue. He was better at Gilly on stumpings and other stuff which I'm not sure counts as a keeper skill (providing info on the batter and what he's trying to do, setting appropriate fields for him, DRS decisions etc). However, this made a more valuable ODI keeper than Gilly upto the stumps.
However overall in terms of wk ability, it's Gilly by a mile, irrespective of the format, but especially in red ball cricket.

Gilchrist…
The main advantage of Gilchrist and Healy is that they have proven against all sort of bowling… express pace or bounce or swing or spin

I haven’t seen anyone which much reflexes like Dujon against fast bowling.. but since he didn’t keep to spinners much he is unproven there.

All of this.
