Great performances in tests nobody talks about

That match was more notable because England had a few bowling injuries and County Cricket trundler Tony Pigott played just because he happened to be English and in New Zealand. What made it more comical was that he cancelled his wedding so he could play. Instead of taking that as an omen he rearranged the wedding for later.
Even more remarkably, Tony Piggott himself supplied the very next post in this thread after this one

While the figures don't quite show it, I thought Flintoff was immense as both captain and allrounder on England's 2005/06 visit to India (3 test series drawn 1-1, England winning in Mumbai while "Ring of Fire" was supposedly the dressing room soundtrack). He scored 264 runs @ 53 (including 4 consecutive half centuries) and took 11 wickets @30, possibly marking the end of his peak as an allrounder. Genuinely led well which was in stark contrast to the Ashes later that year.

From the same season, Murali's 7 for 100 against India in Delhi - came around the wicket to the right handers for the most part and had the ball spitting like like a cobra, had never seen Indian batsmen as mesmerised by a visiting spinner before (except for Saqlain in 1999 perhaps).

Richard Hadlee's counter attacking innings of 87 against India in 1990, Eden Park. Get's overshadowed because Ian Smith then scored 173, a world record for highest score by a number 9 (don't know if it still stands).

NZ got inserted on a green top and were 85/6. Hadlee counter-attacked initially with Shane Thomson and then with Ian Smith. Ian Smith didn't actually go ballistic and play the dominant role until after Hadlee was dismissed. Cricinfo scoreboard tells me Hadlee got 87 of 108 balls. (Smith got 173 off 136 balls. Hadlee did bat more time when conditions were difficult than Smith.

The greentop flattened out, game was a draw, India attack not great, so not probably a 'great perfromance' overshadowed, more a very good one overshadowed by a great one. But the only one that came to my mind ...
