I just never heard anything (okay mostly) Good about either the prequels or the sequels by large. It's like, Indiana Jones Franchise for me by the hearsay. Hot take, there's only one Good (albeit Great) Indiana Jones film. 2nd one is a horrible slog of racism (and I genuinely am almost never raffled by this), 3rd one is fine, 4th is very bad and 5th downright self destruct.
To be clear I was mainly referring to the original trilogy. Like when I encouraged you to watch the Simpsons it was about the golden age.

A New Hope = Great
Empire Strikes Back = Great
Return of the Jedi = Great
The Phantom Menace = Ehhhhhh
Attack of the Clones = Ehhhhhhhh
Revenge of the Sith = Great

Don't watch the sequels, completely unnecessary cashgrab films.
Oh, also

Rogue One = Good

I always maintained this but a Star Wars film should never be made chronologically after Return of the Jedi, there is literally no reason. A franchise about All Powerful Space Wizards, galactic empires, planet destroying weapons and a religion of space wizards and so forth, ending with a party on a remote forest planet is just too perfect.

Should I begin with New Hope? Or Phantom Menace?

The phantom menace has some iconic sabre duels.

So does Clones actually.

But I still believe some of the best star wars was in the latter season of clone wars.

Also Tales of the Jedi as well as Tales of the Empire were great.
