Azhar more consistent, Pujara hit a better peak. Pujara also played on tougher decks which probably exposed his declining abilities more. You could also say his average dipped below 30 when the wickets got really spicy so he can't get too many points for that. Azhar Ali averaged 42ish over basically his entire career whereas Pujara averaged >50 for a while and then <30 for the rest of his career.
