Fried gives the makers more margin for error, IMO. And, if eating on the go, removes the chances that the skin sticks to the paper bag, removing the main reason for eating a steamed dim sim.
But if at a place of repute, then always steamed. |

Fair to say they've never made a proper dent in the UK market.
