If you're using a weapon it's not self defence.

I disagree. If you're using a weapon to defend yourself against someone who isn't though, you're probably not just "defending yourself" at that point.
Especially considering the kid stabbed him "12 times in the chest and abdomen". That sounds more like an attack.
Wait, the kid stabbed him 12 times?
Hard to argue that 12 times constitues self-defence, tbh.

Pretty easy to see a terrified person stabbing an assailant 12 times IMO.
So when someone punches you in the back of the head, it's OK to take out your knife and stab him 12 times. What a joke.
Punching someone in the back of the head is pretty dangerous, especially if its to the base of the head (no way to know how hard he was hit). There's a reason that punch is illegal in boxing, MMA, etc.
Carrying a knife would be sufficient to get him jail time in the UK, I believe.
Often, although a folding pocket knife is not automatically illegal unless its blade is more than 3 inches long
Depending on the exact circumstances English law might take a similar view for the first blow in this case - but I'd be surprised if the other 11 didn't cross the line comfortably
