That was an...interesting night.
But awesome steak at Bobby Flay's. A little off putting though that they brought out their own sauce with the steak, which immediately made me regret coming to this place - but it was an excellent steak nonetheless. Medium rare was actually perfectly medium rare, instead of medium that you'd get in most, even upscale, steak places.
This is proper medium rare:
They season the steak, which is another thing I'd normally find very off putting (a prime steak's seasoning should maybe consist of salt...sprinkled conservatively..). But it made the crust very hard and tasted really nice. So overall, a different, but excellent type of prime steak. It's no Peter Luger, but definitely recommended if you guys visit Atlantic City (the steakhouse is in the Borgata casino).

If your rare steak is chewy, you need to find another restaurant. A prime steak has so much marbling throughout that it should just melt in your mouth. Of course, lower grade beef can be quite chewy.
Well maybe, but being a carnivorous maniac I've given rare steak plenty of shots at expensive restaurants all over the world, and it's always been a bit sub-standard, even when I've had it in the same place medium or well done before and it's been glorious. Might just be one of those things it's seriously difficult to get right.
Pisses me off no end when I order a well done steak and they bring it rare anyway. What the **** gives them the right? It's like ordering steak and being brought a salmon instead because the chef thinks it tastes better. And his opinion is obviously better than yours.
Have you tried the Grill on the Alley, just off John Dalton St (I think - can ne'er remember street names in town....) and King st.... on a little side road that links the two..... Apparently some damn good steaks in there, just be prepared to pay upto £60-70 for the best.

Haha AWTA. Obviously you have the right to like whatever steak you want, but as a Chef, he has a reputation too (other than being an ass)...if he is not happy with putting his name behind chewy well done ****, he won't send it out. So yea, if you goto Outback Steakhouse, you can order that crap whatever way you like - but a real steakhouse with prominent chefs may not serve you well done steaks.
Again, there is no point in having it well done and paying $100 for it....the whole point of paying for a pricier steak is negated if you burn away the things that make it pricey (e.g, the marbling and the fat).
