Some taste profiles are so different than what you're used to, that you wouldn't actually know. And secondly, a lot of things, like balut, are only different in looks - if I gave it to you in a sandwich or a dish without telling you what it was, you'd probably love it (assuming you like meats at all). Some things of course you can tell - for example if you've had gamey meats and don't like that taste, you probably won't like another.
