    but if left standing for long periods of time, the coagulation still occurs..

    There are a number of criteria that have to be satisfied. In the case of American gallstones, it helps if they are left unwashed (see Arkansas or Kansas) because the thick layer of blubber that surrounds any random part of the average American actually acts as a rudimentary anticoagulant.
